Cranberry Apple Crisp with Oatmeal Streusel
SERVINGS
Makes one 13 x 9-inch crispINGREDIENTS
Topping:
1 cup brown sugar, packed
1 cup old-fashioned oats
1/2 whole wheat flour
1/4 cup unbleached white flour
1/4 teaspoon salt
1/4 pound (1 stick) unsalted butter, chilled and diced
Filling:
24 ounces cranberries
1 cup sugar
3 tablespoons apple juice or cider
1 1/4 pounds firm apples (about 3 medium), peeled, cored, cut into cubesPREPARATION
1. Combine the brown sugar, oats, flours, and salt in large bowl and toss to blend. Add the butter and rub in with your fingertips until the mixture resembles crumbs. Refrigerate while preparing the filling.2. Preheat the oven to 375 degrees F. Grease a 9 x 13 x 2-inch glass baking dish.
3. Combine the cranberries, sugar, and apple juice in a large pot. Bring to a boil over medium heat, stirring often for about 2 minutes. Stir in the apples and cook until the cranberries are softened and their juices thicken slightly, about 4 minutes more. Transfer the mixture to the prepared dish and sprinkle on the topping.
4. Bake until the filling bubbles thickly and the topping is brown, about 35 to 45 minutes. Let cool at least 10 minutes before serving.

Oatmeal Cream Pies
Oatmeal Cookies:
- 1 stick butter, room temperature
- 3/4 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/4 cups flour
- 1 1/2 cups oats
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 /2 teaspoon cinnamon
Marshmallow Filling:
- 1 stick butter, room temperature
- 1 7-ounce container marshmallow creme
- 3 cups powdered sugar
- 1 teaspoonvanilla
Instructions
- Cream together the butter and brown sugar until light and fluffy, about 5 minutes.
- Add the egg and vanilla. In another bowl, whisk together flour, oats, baking soda, salt, and cinnamon. Slowly add the to the butter mixture. Mix until just combined.
- Use an ice cream scoop to drop dough balls on a parchment-lined cookie sheet. If you do not have an ice cream scoop, make them into 1 tablespoon sized balls.
- Bake in a preheated 375 degree oven for 8 to 10 minutes. Let cool completely on a cooling rack.
- Make the filling by creaming together the butter and marshmallow creme. Slowly add the powdered sugar and vanilla. Beat until smooth and fluffy.
- Add a generous scoop (I used the same scoop that I used to measure out the dough) of filling to half of the cookies.
- Add another cookie to the top and there you have an oatmeal cream pie.

First we roasted 1cup of Almonds…after roasting add to a food processor for chopping…Depending on your Food Processor you may need to chopped the nut by themselves before adding the rest of the ingredients
